"Nat Wong, rising star winemaker and esteemed ornithologist, left his job at the Monterey Aquarium in 2018 to pursue his passion in wine and subsequently launched Blade and Talon in 2022, named after his favorite things - knives and falcons. Focusing on both traditional and unique varietals, Nat brings a sense of wonder, passion, and scientific precision to his winemaking. This captivating red blend features 44% Négrette (originally from the obscure appellation of Fronton in Southwest France), 34% Malbec, and 22% Cabernet Franc. This wine exemplifies Nat's commitment to minimal intervention and expression of place. In the glass, it reveals a fresh bouquet of plum and strawberry aromas, indicative of its fruit-driven profile. On the palate, it is tart, reminiscent of plum skin, rose petal, and a hint of white pepper, all supported by a taut structure and light, supple tannins.
