"Sottobosco, which translates to “under the woods” is fresh, wild and natural sparkling red that transcends the category of Lambrusco. It’s a blend of traditional varietals - Lambrusco Grasparossa and Lambrusco di Montericco - with the obscure Malbo Gentile and Sgavetta. Certified organic since 1993, the estate creates its own pest control mixtures with algae extracts, essential oils and micro elements. After harvest, the grapes are left in the cellar for one night before pressing. Skin maceration and the initial fermentation lasts 10-15 days before the wine is bottled and a second fermentation takes place over the course of 3 months. Aromas of fennel, cherry and smoke lead to a dry, woodsy palate of dark, brambly berries. Enjoy with a zucchini lasagna with Parmigiano Reggiano or alongside Amaretti di Modena."
