"Sonate is a single vintage blend of 78% Pinot Noir and 22% Chardonnay from 35 year old vines located in the Côte de Champraux, Valprune et Charme de Fin that have been farmed biodynamically since 1989. It’s fermented with wild yeast in large vats, both neutral oak and stainless, then undergoes full malo prior to the 2nd fermentation in bottle where the wine rests for almost 10 years prior to disgorgement with no dosage and no added sulfur. It’s crisp, clean and bone dry with persistent streams of fine bubbles that form a delicate mousse. The nose is vibrant with aromas of a well tended garden, yellow stone fruits and white flowers. The palate is ample and generous with apple compote, quince and stonefruit flavors, hints of hazelnut, warm brioche and pronounced minerality. While it can certainly pair with a raw seafood tower, it’s strong enough to stand up to escargot-stuffed cremini mushrooms!"
