"Located on the northern slope of Mount El Ras, only 5km from Bethlehem and 12km from Jerusalem, Cremisan was established in 1885 by Father Antonio Belloni, who is remembered as Abu El Yatama (Father of the orphans), who then enlisted the local Salesian Monastery to run the winery. Its mission has been to produce exceptional wines from indigenous varietals in order to support the work of the monastery, its orphanages and the local poor. This exotic and enticing white is a 50/50 blend of Hamdani (aka Marawi) and Jandali, that showcases the unique character of these indigenous Palestinian grapes. Harvested by hand, at night or early dawn, the grapes are destemmed, gently pressed and fermented in cool, temperature-controlled stainless steel tank with selected yeast where the wine rests for 4-6 months on its lees. The nose displays generous aromas of pineapple, mango, and guava with a note of honeysuckle. On the tongue, it offers a delicate, silky texture with medium-body and lively acidity, tropical fruit and a crisp, refreshing finish. Pairs well with savory pastries, medium-soft cheeses, or Farro salad with Za’atar fried chickpeas."
