The grapes spend 24 months in oak, and 36 months in the bottle, leading to a mature and round profile. You can expect flavors of black cherry, cedar, and violet with a medium plus body and fine lingering tannins. This wine pairs best with tapas or chorizo and aged cheeses, or peril (marinated pork shoulder)."
