Domaine Gavoty Grand Classique Rosé

Certified Organic and surrounded by oak and pine forests, Domaine Gavoty is a polycultural farm encompassing 110 hectares in total that the family has worked by the Gavoty family since 1806. Their Grande Classique Cuvée is indeed a classic Provençal rosé comprised of roughly equal parts Cinsault and Grenache with Carignan playing a supporting role. Roselyn Gavoty allows the grapes to macerate for several hours before pressing, and vinifies the saignée and first-press juice separately, allowing her the flexibility to blend the more succulent and tender saignée with the more angular and structured press-juice to achieve the precise textural qualities she seeks. Fresh yet subtle strawberry and raspberry aromas and flavors are framed by limestone minerality, a dash of mandarin bitters and a crisp, dry citrusy finish. Pair with Bouillabaisse or Tian Provençal (a summer vegetable tart).
