
Made from the oft-neglected Grillo grape, this expressive and textured white comes from Elios winery’s project to create exciting natural wines from varieties indigenous to Sicily. The grapes are grown organically with some biodynamic interventions and ferment spontaneously in stainless steel. The wine is then aged for seven months on the lees, which adds texture and complexity, resulting in a wine that drinks a bit like an orange despite its lack of skin contact. Crisp, dry and medium bodied, with enticing aromas of lime pith, mandarin blossom and balsam, this precise white has gorgeous ripe citrus and stone fruit flavors on the palate and a mineral-driven finish. Serve alongside heirloom tomato caprese or grilled branzino.
