"Massimo Alois, the de facto professor of Campanian wine, displays jars of dirt from every vineyard he's ever visited on shelves in his cellar and has collaborated with the University of Napoli to identify and preserve the abandoned and forgotten indigenous varietals of their region. Among them, Pallagrello Bianco from the Morrone vineyard is the crown jewel of their estate and a perennial Tre Bicchieri award winner. The vines are planted on the most easterly location on the foothill of Monte Friento, on limestone and volcanic soils at a gradient of more than 30 degrees and from the only site that faces due south. He even includes a small box with a jar of the two soil types in every case of this wine! As a result of this unique and extreme terroir, the wine is ripe, sinewy and generous. Fermented in 2/3 stainless steel at 13°/14 ° celsius and 1/3 in neutral oak on the lees, it puts forth aromas of apple, pear, pineapple, and melon with a well-knit palate that integrates the wines acidity, minerality and fruit. Pair with something exceptional, like Fritto Misto or Polipetti Affogati!"
