"Tending the family vineyards alongside his grandfather at an early age, planted the seed which led Jean-François to launch his own domaine in 2010. He subsequently acquired a pebbly parcel with deep clay subsoils in Crozes-Hermitage where this earthy, brooding 100% Syrah is grown in accordance with the principles of lutte raisonée. Harvested by hand, de-stemmed and macerated for 16-18 days with daily punchdowns and pumpovers, half of the wine is aged in large, 600ml oak demi-muids and the other half is aged in stainless steel. Structured and dense with aromas of wet earth, black cherry and violet with a touch of gaminess are followed by ripe dark fruit tones, black olives, pronounced minerality and copious, yet round tannins. Pair with lamb chops, Cassoulet or Dal Makhani lentil stew from Punjab"
