
Roberto Henriquez is renown for tracking down prized parcels of abandoned old vineyards and bringing them back to life. This País Verde is from 150+ year old vines that are believed to be direct descendants of those brought to Mexico by Hernán Cortés in the early 1500s and subsequently made their way down to Chile, a land protected by desert, ocean and mountains that has never seen phylloxera. Harvested by hand, the grapes undergo spontaneous fermentation in open-air troughs, then rest in a combination of 70% concrete eggs and 30% neutral barrels for 11 months. Bright with tart red cranberries, cherries and chinotto with a slight kombucha-like funk. It’s light-bodied and finishes with notes of dried oregano and sandy salinity. Made for the beloved Chilean ‘choripan' a chorizo sandwich with avocado and pebre (a tomato salsa) or a classic Banh Mi.
