
On the nose, strawberries, orange zest, and rose petals prevail. The palate is dry and creamy, with notes of cranberry, wild strawberry, red flowers and pie crust with a very dry finish. The finish is citrus oil driven with pleasant acidity and persistent bubbles. Tasting notes reminiscent of the rich and slightly savory style cheesecakes of the Basque region of Spain. Blend varies by release, typically includes Macabeo, Xarel-lo, Parellada and Monastrell or Garnatxa. Aged for at least 24-30 months on the lees. Disgorged with zero dosage.
