Today, their vineyards are farmed organically and their wines are made with minimal intervention. A blend of 50% Xarel-lo, 40% Macabeo, and 10% Parallada, this bone-dry Cava has notes of apple, brioche, and citrus. Refreshing and crisp with a round, elegant finish, it makes a great pairing for a tapas spread of jamon serrano, manchego, and marinated anchovies."
