"Named after the Roman god that blew gentle breezes in a turbulent region known for the giant waves around Nazaré and Peniche, Favonius is the muse behind this Portuguese passion project. Curtimenta is their beautiful skin contact white blend of 90% Firnao Pires and 10% Arinto. Harvested by hand, the destemmed grapes macerate and ferment with native yeast on the skins for 12 days in stainless steel vats. Once fermentation is complete, the juice is lightly pressed off the skins, rests in tank without bâttonage for a few months and is bottled without any finning or filtration. The result is a beautiful, compelling yet approachable orange wine with floral aromas, mandarin peel bitters, lemon zest and juicy passionfruit with white pepper and subtle tannins on the crisp, dry finish. Pair with strong salted and dried fish or a soft, stinky sheep’s milk cheese like Portuguese Serra da Estrela."
